Roasted Zucchini


Zucchini gets a bad reputation. I think it gets a bad rep because it isn't cooked well. Most people like to just boil their vegetables. THERE ARE OTHER WAYS BESIDES BOILING!!! Roasting is my favorite way to cook vegetables. It keeps the vegetables from getting soggy and keeps the flavor and nutrition in. This is one of my favorite recipes that can be used for most vegetables not just zucchini. While you are cooking your vegetables in the oven, you can stick these in the oven and they will be done by the time everything else is done cooking! It's quick, easy, and cheap!

Servings: 3-4 cups


Ingredients*

  • 2 Large Green Zucchinis $1

  • ¼ cup olive oil <$1/AP

  • 2 Tsp black pepper <$1/AP

  • 2 Tsp salt (or seasoned salt)<$1/AP

  • 2 Tsp onion powder <$1/AP

  • 2 Tsp garlic powder <$1/AP

  • 2 Tsp parsley <$1/AP

  • 3 Tsp of Nutritional yeast <$1/AP

Directions

  1. Preheat oven to 350.

  2. Cut zucchinis into slices, about 1 centimeter wide.

  3. Place zucchinis in a bowl, add olive oil, spices and nutritional yeast. Mix until zucchinis are evenly coated.

  4. Place zucchini on a non-stick cooking sheet in one layer. Do not stack the slices.

  5. Bake zucchini for 15 mins or until the bottom is golden brown. Enjoy!
