I have a confession to make, I LOVE potatoes. It is one of my staple vegan foods. They are tasty and help you stay fuller longer. The best thing I like about this recipe is that you can add any ingredients that you have in the fridge to customize your meal. When making this for "meat-eaters" they always say, "THIS is vegan?!?" This is my go to when people are visiting me because of this reaction. You can never go wrong with potatoes.
This is my staple breakfast which I usually eat with some avocado toast or some vegan sausage. You can make a lot of it for a cheap price. This is a great recipe when you have a lot of friends and family to feed, you can just double or triple the recipe!

One large red potato $0.50
1 Tsp of vegan butter (optional) $1/AP ($2-4 for container)
½ cup of chopped mushrooms of your choice $1
½ cup of chopped tomatoes without seeds $0.50 ($1 for a whole tomato)
½ cup chopped onion $0.25 ($0.50 for whole onion)
1.5 cups of spinach chopped $1 ($3 for bag/container)
¾ tsp of salt or season salt $1/AP
¾ tsp of parsley $1/AP
½ tsp of pepper $1/AP
½ tsp of onion powder $1/AP
½ tsp of garlic powder $1/AP
Optional: green peppers or other of your favorite vegetables
Place butter in nonstick pan on high heat (if using a nonstick pan, butter is optional). Once melted placed chopped red potato into skilled 5 mins until golden brown. Place lid on top and turn heat down to low for 5 to 10 mins until potatoes are tender.
In the same pan, move potatoes to one side and place mushrooms, tomatoes, and onions on the other. Place lid back on top and cook on low heat for 5 to 7 minutes until vegetables are cooked.
Place seasonings into skillet and stir vegetables until everything is evenly coated.
Stir spinach into pan with the rest of the vegetables. Place lid back on for 1 to 3 mins until spinach is wilted.
